Cuts and doneness explained

Rib eye comes from the upper rib. It is richly marbled, which makes it especially juicy and full of flavour – the classic for steak lovers.

Beef fillet is the most tender cut of beef: lean, delicate in flavour and ideal if you like it extra tender.

Tomahawk is a rib eye with a long rib bone. The bone adds extra flavour on the grill – a cut for special evenings.

Doneness: rare (raw and cool inside), medium rare (pink and juicy), medium (pink centre, firmer) and well done (cooked through). For rib eye and tomahawk we recommend medium rare to medium – just tell us how you like it.

The right wine for your steak

Rib eye and tomahawk call for powerful reds with firm tannins – such as the Reserve Xinomavro by Alpha from Amyndeon or a Nemea Agiorgitiko by Papaioannou. With the tender fillet we recommend a more elegant red like the Limniona by Oenops. If you prefer international wines, our wine list also features Tignanello and Sassicaia. Our team is happy to advise.
